The white cloud is the hot, sweet steam produced from boiling down sap from maple trees, condensing it into pure Vermont maple syrup.

Not being from Vermont, this was my first time in a sugar house. I was introduced to the Vermont Special: hot maple syrup with Jameson's Irish Whiskey.
